In a large bowl, using an electric mixer, beat butter and 1 cup (250 mL) sugar. Stir in egg and molasses, beating vigorously so that the mixture is well ventilated. In another bowl, combine flour, ginger, baking soda, cloves, cinnamon and salt. Mix well (you can pass through a sieve so that the mixture is well blended). Add dry ingredients to the butter mixture and mix with a spoon until the dough is firm. Cool the dough in the fridge for an hour. It will be more malleable. Spread the remaining sugar on a plate.
With hands, shape the dough into balls, 1 c. to tab (15 ml) at a time, then roll in sugar. Put the balls on baking trays lined with parchment paper, spacing about 2 inches (5 cm), and press to flatten slightly. Place a baking sheet on the top rack of preheated 350 F (180 C) and cook for about 10 minutes or until the edges of cookies are lightly browned oven. Place the plates on racks and let cool.
